2 Ingredient Pancakes

There are many different ways to make keto pancakes but it does not need to be any more complicated than this!


- 4 ounces of cream cheese

- 4 eggs



- Soften the cream cheese by letting sit at room temperature for at least an hour.

- Blend the cream cheese, eggs, and a small spoon of vanilla well in a blender or food processor.

- Heat a non-stick pan on medium with a small amount of butter. Pour the batter into it and cook until bubbles start to form. Flip and cook until barely browned on both sides.

Adding a little bit of vanilla to your batter is a nice addition. You will see that adding vanilla to eggs is all that makes up the distinctive flavor or smell of cake, so adding a little to anything with eggs will go a long way to making it taste like a dessert without adding any sweetener.

Low-carb toppings for pancakes: Top with monk fruit maple syrup (check out Lakanto brand), some no-added-sugar berry jam, or just simply butter. You can even whip up a quick batch of cinnamon butter. Like vanilla, cinnamon is another flavor we usually associate with sweet foods, so it can make these pancakes taste like a dessert without any sweetener.
